Car's Feast Table - Mushrooms Menage a Trois

Madeira Mushroom Trio Sauce

Ingredients

1/2 Oz Monterey Porcini Dried Mushrooms, reconstituted (Crimini)
1 shallots, chopped
1/2 cup(s) Button mushrooms, sliced
1/2 cup(s) shiitake mushrooms, sliced (Portobello)
2 Tbsp fresh parsley, minced
2 Tsp Vegetable Oil (Grass Fed Herb Butter)
1/2 cup Beef Broth
2 Tbsp Madeira Wine (1/2 Bottle)
1/2 Tsp McCormick Thyme Leaves

1/2 Tsp Salt

Instructions

1 Soak dry mushrooms in 1 cup hot water 20 minutes to reconstitute; rinse quickly under cool running water to clean.
2 Meanwhile, chop shallot, slice mushrooms and mince parsley.
3 Heat oil in a 3-quart saucepan over medium-high heat; sauté shallot 1 minute.
4 Add mushrooms; sauté 3 minutes longer.
5 Add beef broth, wine, thyme and salt.
6 Bring to a boil and reduce heat to low.
7 Simmer 8-10 minutes (until sauce can just coat the back of a spoon).
8 Remove from heat and stir in parsley.
